Follow-up inspection:
- 50 ppm chlorine sanitizer dispensed from the low temperature dishwasher and the glasswasher at the plate level.
- 200 ppm chlorine solution available in spray bottles as surface sanitizer.
- Quaternary ammonium dispenser dispensed 50 ppm quaternary ammonium solution. 200 ppm is required for surface sanitization. Use chlorine sanitizer to clean and sanitize all food contact surfaces before the dispenser can dispense 200 ppm quaternary ammonium.
- No potentially hazardous foods were stored in the broken prep cooler.
