- Temperature Control: No concerns noted this date. Monitoring is required to be conducted on site - Temperature logs reviewed. Ensure "internal" temperature monitoring of cooked food items are being conducted.
- Mechanical Dishwasher: High Temp: 75.2 C.
- Ensure all food contact surfaces and implements are being washed and disinfected after use or on a timely manner.
- Quat Sanitizer spray bottles - Ok. LEMON TREE: Active Ingredients are required to be reviewed and approved prior to use as a "Foodgrade" sanitizer!
PREVIOUSLY NOTED:
- Wiping cloths, used on food contact surfaces, are to be stored in a sanitizer at all times. Cloths are to be kept completely submerged in the sanitizer. Change sanitizing solutions in buckets every couple of hours. Change sanitizing solutions in bottles daily. Test strips are to be on site for monitoring. Manufacturers directions are required to be followed! (ie: Quat solution - Not to exceed 200 ppm)
- "T Towel Use" - T towels are noted to be lining counter tops and delivery racks? Eliminate the use of T-towels being used as a drying/lining medium on site.
- Food Storage: Ok. Stock rotation discussed. (ie: First In - First Out) Monitor expiration/best before dates.
- Sanitary Facilities: Ok.
- Chemical Storage: Ok.
- Staff hygiene: Discussed. (ie: Handwashing/Glove use, etc.)
- Sanitation: Ok.
- Pest Control: Pest control monitoring is currently being conducted. Pest control reports are to be kept on site for review.
- Structurally: No concerns noted this date.
- Garbage, Composting, Recycling and Oil Disposal: All items are to be kept stored in covered, rodent proof containers.
- FoodSafe trained staff are to be on site at all times.
- Food Safety Plan and Sanitation Plans are to be kept on site. Staff training is required to be conducted. Generic flowchart was previously provided for reference.
