Observation: Accumulation of dust observed on the metal knife rack located in the dry storage room.
Corrective Action(s): Clean and sanitize the knife rack and all knives stored in it. Ensure to follow your sanitation plan for schedule cleaning. Correct by: Immediately

Observation (CORRECTED DURING INSPECTION): Sanitizing bucket at the bar area was measured at 50 ppm quaternary ammonium. Staff stated water was added to the bucket to dilute the food sanitizer.
Corrective Action(s): Solution inside the sanitizing bucket was discarded and filled with 200 ppm quaternary ammonium sanitizer from the dispenser. Do not dilute the sanitizer with water after filling it from the dispenser.

Observation: Various food inserts stored inside the walk-in cooler and sandwich cooler were not covered.
Corrective Action(s): Cover all food with a food-grade barrier such as saran wrap during storage to protect them from contamination. Correct by: today.

Observation (CORRECTED DURING INSPECTION): Back entrance door was open at the time without any screens.
Corrective Action(s): Door should be closed except for during deliveries to prevent entrance of pests. Alternatively, install a screen at the door.

- Freezers (walk-in, under the counter) maintained at -18C or less.

- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm quats available in pails at the kitchen area.
- 100 ppm bleach sanitizer available in pail.
- High temperature dishwasher registered 71.5C at the plate level.
- Glass washer dispensed 12.5 ppm iodine at the plate level.
- Ice machine maintained in a sanitary condition.
- Food stored off the ground.
- No pest activities observed at the time of inspection.
- Temperature records not maintained. Ensure to maintain temperature records for all coolers and freezers on a daily basis.
