Observation: Undercounter cooler across from pot washer had a broken door seal (mould growth).
Corrective Action(s): Ensure door seals are maintained in good condition to prevent accumulation of debris and mould growth. Keep door seals in a clean and sanitary condition to prevent potential mould growth.

Comments

-Walk-in cooler was at 2C.
-Walk-in freezer was at -18C.
-Cake display coolers were at or below 4C.
-Customer area cooler was at 4C.
-Under counter prep coolers were both at 4C.
-Temperatures are checked and recorded daily.
-Pot washer had a final sanitizer temperature of 72C on the pot surface (minimum 71C required for proper sanitizing).
-3-compartment sink used for cleaning and sanitizing. Sink plugs available and Quats sanitizer tested at 200ppm. Sanitizer concentration is tested daily (records indicate 300ppm).
-Quats sanitizer spray bottles properly labelled and tested at 200ppm. Current practice is to prepare sanitizing solution at the end of the night. Sanitizer solution should be prepared in the morning and used to sanitizer food contact surfaces throughout the day.
-Foods properly stored off the floor and covered.
-General sanitation satisfactory. Ensure staff clean under the shelving units in the walk-in freezer.
-Facility serviced by a professional pest control operator.
-No signs of pests noted at the time of inspection.
