Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle had >400ppm chlorine measured. Operator was advised to prepare 200ppm chlorine solution and have all food contact surfaces sanitized using the solution at this time.
Corrective Action(s): Ensure to prepare 200ppm chlorine by adding 1 tsp of bleach per 1 L of water. Use the solution to have all food contact surfaces sanitized before initiating food prep in the morning, after each possible contamination and every 2 hours during operation.

Comments

Routine inspection conducted:

- Handwash station adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C; freezer operating at/below -18'C.
- Hot-holding units operating above 60'C. Secondary cook step done on griddle.
- Temperature monitoring system in place.
- 3 compartment sink equipped properly for manual warewashing.
NOTE: Ensure all dishes/tools are washed with soap and water (45'C) --> rinsed with water (45'C) --> soaked in 200ppm chlorine (allow at least 30sec contact time) and air dried. Do not use pails as discussed at the time of the inspection.
- Washroom satisfactory. Dry storage area satisfactory.
- No evidence of pest activity observed.

General sanitation satisfactory but could be improved by cleaning hard to reach areas on a more regular basis.
