Observation (CORRECTED DURING INSPECTION): 1. Various cooked food items observed to be cooling at room temperature. Products all measured between 13-17°C at time of inspection. Room temperature was approximately 15°C.
**Corrected during inspection** Food items moved to cooler upon request. Staff stated foods were stored for around 2 hours.
Do not store cooked foods at room temperature. Products must be cooled and put in fridge within 2 hours.

2. Rice scoop observed to be stored in small pitcher of water. Do not store scoops in water as this can promote growth of bacteria.
**Corrected during inspection** Scoop to be washed and sanitized upon request. Staff stated ice is normally in container, but has melted.

Observation: Low temperature mechanical dishwasher has run out of sanitizer. Staff has stated they have tried to get more, but supplier has still not yet delivered.
**Corrected during inspection** Facility is to switch to manual dishwashing method using 2 compartment sink.

Ensure sanitizer is at appropriate concentration (100-200ppm). This can be mixed using 1 tbsp household unscented bleach : 1 gallon (US) water.

Purchase sanitizer for dishwasher by April 14.

Observation: 1. **REPEAT** Heavy build up of grease observed on, behind, around cookline, deep fryer and range hood filters
2. **REPEAT** Cardboard used as shelf liner and splash guard showed heavy build up of grease and food debris (sauce)
3. **REPEAT** Cutting board stored on top of butcher's block showed heavy scoring and is stained. Staff stated board was unable to be returned to white surface using bleach
4. **REPEAT** Build up of food debris observed on magnetic knife holder next to butchers block and shelving beside deep fryer.
Corrective Action(s): 1. Clean, degrease and sanitize all areas identified. If cleaned weekly, frequency for cleaning will need to be increased based on observed build up.

2. Soiled cardboard must be removed from restaurant area. This is a potential attractant to pests and is not an approved material for use in kitchen areas
