Follow-up inspection conducted. Metal guards installed for rice pallets; keep items away from perimeter so signs of pest activity can be easily monitored. Display surface of fruit stands have been painted white. All rusted shelving have been removed from premises, replaced with new prep tables. Fruit fly population has been reduced. Various sticky + zap traps have been installed. This must be an ongoing effort because activity will likely increase with the commencement of food preparation --> you must spray down the floor and sink drains (hot water and bleach) on a daily basis, keep garbage cans covered and removed daily until population is eliminated. Cleaning completed for staff room, electrical closet and ice machine. Bristle type door sweep has been installed on dry storage room door by prep kitchen. Premises may reopen for business, contingent on the following conditions: - No room temperature holding of cooked foods until further notice. - Remain on pest control service on a minimum twice a week frequency until there is consistently no activity (discuss with district EHO when this is appropriate) --> retain all pest invoices for EHO to review - Flooring in prep kitchen and produce prep room are in need of reparation; operator is to submit a work order proposal for review.
