Comments

Store rags that are in use in a bucket of sanitizer. Check to make sure that the sanitizer is at the correct concentration (200ppm chlorine if using bleach).
Store personal items such as jackets and back packs away from the dry storage shelf.
Store cream sauce and butter chicken sauce in the bottom compartment of the refrigerated make table where the temperature is colder and more stable.
General sanitation is good.
Temperature of refrigeration is satisfactory.
The foodsafety plan flow chart for "No Cook", "Cook-Serve" and "Cook Chill Reheat-Serve" have been provided. Please fill in the bottom by providing a list of the menu items that is applicable to each plan (i.e., salad for "No Cook", hamburger for "Cook serve"). Fax or email to my attention.
