Code 302 noted on Routine inspection # JSAS-CKER67 of Oct-21-2022 Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: Wiping rags left on counters without any sanitizer solution prepared. Correction: All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

Reviewed safe use of wiping rags. Wiping rags in use to be stored in 200 ppm Quaternary Ammonia to be applied to food contact surfaces. Reviewed the need for daily cleaning maintaining premise sanitation after closing and before premise opening. Pest control service technician attended premise to apply bait and traps. Metal flashing installed around front beverage cooler to exclude pest entry into kitchen area. Premise inventory re-organized and de-cluttered to allow for more effective cleaning and pest monitoring. Premise cleaning conducted as required. Closure Order complied with and now rescinded. Premise may resume operation when ready. Discussed with operator the installation of a new light colour, tile surface that will be easy to clean and maintain.
