Sanitation items in Code 306 outstanding. Operator to ensure walk-in cooler door is deep-cleaned to remove build-up. Area below 3-compartment sink requires cleaning and sanitizing with a dilute bleach solution at 100ppm. Noted areas must be maintained in a sanitary condition to prevent the attraction of pests. Prep cooler (upper and lower components) in Code 308 ambient air temperature noted at 3.8C. Operator to ensure daily temperature logs are maintained for cooler and freezer units. No further concerns noted at the time of inspection.
