Observation (CORRECTED DURING INSPECTION): Equipment/utensils/food contact surfaces not maintained in sanitary condition.
Observation: vegetable slicer and rotary slicer were not completely clean. Food debris was noted around the blades.
Correction: Operator disassembled the blades and moved them to the ware washing sinks for adequate cleaning and sanitary.
Rationale: adequate sanitation prevents cross contamination of foods and food contact surfaces. Dirty equipment left at room temperature can harbour pathogens which can cause foodborne illness.

Observation (CORRECTED DURING INSPECTION): Equipment/utensils/food contact surfaces not properly washed and sanitized.
Observation: Santize pail bucket and spray bottle contained 50ppm QUATS solution. Test strips were present at the facility.
Correction: The sanitize pail bucket and spray bottle were refilled at the time of inspection and were at 200ppm QUATS. Ensure 200ppm QUATS is maintained in all sanitizer containers. Use strips to test.

Observation (CORRECTED DURING INSPECTION): Adequate handwashing stations not available for employees.
Observation: ware-washing sinks in the back, also used for handwashing, did not have disposable paper towels in the dispenser.
Correction: Operator refilled the dispenser at the time of inspection. Operator confirmed that the back sinks are used for handwashing as well.
Rationale: Adequately equipped hand sinks encourage frequent handwashing which protects food from contamination.

Observation (CORRECTED DURING INSPECTION): Employee does not wash hands properly.
Observation: employee was spotted only rinsing her hands with water instead of using soap.
Correction: employee washed her hands again at the time of inspection.
Rationale: adequate handwashing protects food from contamination through handling.

No signs of recent pest activity was noted at time of inspection. Back door was closed.
NOTE: door sweep is recommended for back door.

3 compartment sink available with plugs.
Dispenser dispenses 200ppm QUATS.
NOTE: be sure to not store sanitized "clean" utensils and equipment on "dirty" racks. Separate clean and dirty and wash the bins holding the clean utensils to maintain sanitation.
Washrooms in good sanitary condition with adequate handsinks.
Administration
Staff is FoodSafe level 1 certified valid until January 2024.
Temperature and cleaning logs are maintained.
COVID - safety plan is present on premise. Seating is limited and ground markers are available for physical distancing.
