Observation (CORRECTED DURING INSPECTION): Large quantity of food out during lunch rush. Food found to be at temperatures between 25 and 45 degrees Celsius. Some items cooling, some items intended to be left out for lunch rush.

Ensure all paddles stored in water are stored on ice
Ensure ice wand is well wrapped in food grade plastic such as plastic wrap or bucket.

Observation: Rodent droppings found on floor in corners of dry storage unit.

Corrective Action(s): Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Inspect facility for points of entry for pests. Seal any holes.
Obtain services of professional pest control company.
Have traps set.
Follow recommendations advised by Pest Control Company Technician.

Observation: The following items were observed that will contribute to pest infestation and must be corrected immediately:
- Hole observed in restaurant wall next to dishwasher
- Small gap found along bottom of storage unit - shown to staff
- Disorganized back storage room
- Back storage door left open during the day
- Items stored too low to floor in back storage room and on floor in front food preparation area

Corrective Action(s): The following items must be completed:
- Repair hole in wall next to dishwasher
- Add to door sweep so that no hole exists
- Back storage room should have shelves installed so that items are not piled on rolling carts which makes cleaning difficult. Rearrange back storage room or add shelves above freezer units
- Going forward the storage room door is to remain closed
- Items are not to be stored on floor in kitchen or in back storage unit. Obtain more storage and organize current storage.

Observation: Rodent droppings found in storage unit. Floor only in hard to reach corners and behind freezer unit.
Back storage unit and kitchen have too many items stored on floor and low wheeled pallets. This makes cleaning difficult.

Corrective Action(s): Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Reorganize front kitchen, front service area and back storage area. The facility is lacking an under counter cooler as this was deemed unnecessary during the opening inspection process. This area is additional storage and should be better utilized. Other cupboards in front are almost empty. There is no reason most of these food items can not be put away. Put them away.

Rodent droppings are limited to floor of storage unit FOR NOW. If immediate changes do not occur the facility will experience a rodent infestation. CAREFULLY READ THIS REPORT AND FOLLOW DIRECTIONS
