Observation: (Ramen bar only) 2 soiled cloths left on work counters without any detectable sanitizer residual.
Correction: All wiping cloth rags in use are to be stored in a container of sanitizer solution (100 ppm chlorine, 1 tea spoon of bleach per 1 litre of water).

Observation: Dishwashing station: - garbage can located next to clean dishware storage shelving such that dishware can be easily contaminated from items discared into waste container.
Correction: Relocate trash can away from clean dishware shelving to protect clean, sanitized dishware from contamination.

Observation: Handsink between salad / miso prep cooler and upright cooler does not have hot water supply. Hot water was turned off due to plumbing fixture leak.
Correction: Repair plumbing fixture leak.
Handwashing stations must be equipped with warm water to allow for staff to follow proper handwashing.

-Kitchen magnetic knife strip observed in sanitary condition, knife strip to be used to store only cleaned knives
-hot water supply restored to handsink next to salad prep. cooler.

-dishwasher staff working onsite upon premise opening - no back log of soiled dishware or kitchen waste from previous day observed.
-oversized ramen cooking pot removed from premise. - all dishware and cooking ware must fit within dishwashing sinks/dishwasher provided.
