Observation (CORRECTED DURING INSPECTION): Less than 100 ppm chlorine sanitizer was available inside the sanitizer spray bottle.
Corrective Action(s): Operator setup 100 ppm chlorine sanitizer (1/2 teaspoon bleach per L of water) during the inspection. Replace the bleach water solution in the spray bottle frequently enough to maintain a 100 ppm chlorine sanitizer concentration.

Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Operator confirmed that only heated food (e.g. pizzas and panini sandwiches) are sold on-site.
Paneer used on-site is obtained from an approved source.
Walk-in-cooler and pizza prep. cooler were at or below 4 degrees C.
Second prep. cooler was unplugged and empty of food.
Chest freezer was at or below -18 degrees C.
Hot-holding unit was turned off and it was empty of food at the time of inspection.
Can-opener and dough roller had been cleaned and sanitized.
Sanitizer spray bottle was properly labelled to identify the contents.
Thermometers were replaced in the walk-in-cooler and prep. cooler.
Dough mixer was in a clean condition.
COVID-19 safety plan was available on-site.
Maximum occupancy limit was posted.
Operator confirmed that she and the staff member on shift try to maintain a minimal 2 m physical distance from each other and they both wear masks.

The following action is required:
-Ensure there is an accurate probe thermometer available on-site to check the internal temperature of cooked food; Correct today. Contact the district Environmental Health Officer for a follow up inspection once you obtain the probe thermometer.
