Observation (CORRECTED DURING INSPECTION): It was noted that the staff was not sanitizing the dishes/equipment after washing them in 2-compartment sink.
Corrective Action(s): Ensure that the food contact surfaces are washed and then sanitized with an approved sanitizer.
A bottle of bleach was available on site and the operator stated that all food contact surfaces/dishes/utensils will be washed and sanitized with bleach solution (100-200ppm). Follow the 2-compartment dishwashing method signage posted in dishwashing area.

Comments

Routine inspection conducted at food facility and the following observations were made during the inspection:

Temperature:
- Chest freezer recorded at -17C.
- Under counter freezer at -18C.
** Ice build up observed inside the freezer and may require cleaning/service in future.

- Prep cooler at 3C (bottom) and 4C (top).
- Temperature logs were maintained and found up-to-date.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and the concentration of bleach was noted way above 200ppm.
**Follow manufacturer's instructions to prepare bleach solution. Recommended concentration for bleach (5%) is 100-200ppm. Chlorine test strips can be used to verify the concentration.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.

Storage:
- All food items were stored at least 6" off the floor.
- All products were either stored in original packaging or covered inside coolers.
- Burner stove, deep fryer and electric toaster were present in the facility but not in use at the time of inspection.
- Sugarcane machine was installed in kiosk but not in use. As per the operator, they have acquired the NSF certification and may offer sugar cane juice in future.

COVID-19 Safety Plan:
- A copy of COVID-19 Safety Plan was available on site.
- COVID-19 protocols were in place.
- Maximum occupancy limit was posted at entrance.
- Hand sanitizer was provided for clients and staff.
- A COVID-19 checklist was completed during inspection and emailed to the operator. Please review this checklist for more details.

** Conduct daily staff health checks for COVID-19 symptoms and maintain records for at least 30 days.
** Establish and post maximum occupancy limit in lunchrooms and washrooms.
** Post signage in self-service area reminding clients to use hand sanitizer prior to using the bulk bins.
