Observation (CORRECTED DURING INSPECTION):
Bleach sanitizing solution in cloth bucket had [Cl2] of 0ppm, and bleach sanitizing solution in spray bottles had [Cl2] of 50ppm. The strength of the sanitizing solution is too low to kill germs, viruses, bacteria, etc..
Corrective Action(s):
1) Dump out the sanitizing solution and make a new batch up so the [Cl2] is 200ppm. Purchase chlorine test strips so staff can ensure the strength is correct.
2) Buy new bottle of bleach, as the bleach may be old. Purchase "Javex" brand bleach as it has a higher concentration of chlorine % than NN brand.
3) Sanitizing solution in cloth bucket MUST be changed every 2-3 hours with new sanitizing solution.
4) Sanitizing solution in spray bottles MUST be changed every 2-3 days with new sanitizing solution.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -21C; thermometers present.
- High temperature dishwasher had rinse cycle temp of 77.7C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in cloth bucket had [Cl2] of 0ppm and spray bottle had [Cl2] of 50ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Domestic exhaust hoods professionally cleaned in October 2023, next service in October 2024 as per sticker.
- No signs of pests.
- All surfaces are in good working order.

ACTION
- Bleach sanitizing solutions in the cloth bucket and spray bottle must be changed so the strength is maintained at 200ppm at all times.
