Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Three compartment sink set up with detergent but chemical sanitizer less than 200ppm
It was determined that the "chemical sanitizer" was actually dishwashing detergent.
Facility only has QUAT based testing strips available for use
.
Correction: Cease use of this product as a chemical sanitizer and use either:
1) Chlorine sanitizer solution (made on site as EHO was present)
2) QUAT based sanitizer solution (one remaining jug was found stuffed in corner under prep sink)
Obtain Chlorine based sanitizer testing strips if Chlorine sanitizer is to be used
.

- Dishwasher has been repaired. Temperatures of greater than 71 (77) degrees Celsius observed at the plate
