Observation (CORRECTED DURING INSPECTION): Unless the premises provides a written sanitation plan on how the wiping cloths are to be properly laundered and sanitized after use the cloths must only be used once then discarded. Wiping cloths observed drying on shelf. These were discarded.
Corrective Action(s): Submit a written sanitation for review if premises wants to reuse wiping cloths. Keep the "single use" disposable towels in quat sanitizer and change every 2 hours. These towels are always discarded at the end of the day.
