Observation: The low temperature dishwasher had [Cl2] of 0ppm during the rinse cycle. Pathogens and bacteria are not being killed.
Corrective Action(s): Immediately call a company to service the dishwasher and increase the [Cl2] between 50-100ppm during the rinse cycle. Manually sanitize the dishes, after it has gone through the dishwasher, by soaking it in a sink filled with hot water and bleach (1Tbsp bleach to 4L of hot water).

Observation: Low temperature dishwasher had [Cl2] of 0ppm, the dishes are not being sanitized.
Corrective Action(s): Immediately call a company to service and repair the dishwasher, so the [Cl2] is between 50-100ppm during the rinse cycle. Purchase chlorine test strips, so staff are able to test and monitor the chlorine level every day. During the inspection, the owner called a company to come service the dishwasher.

Observation: Owner/operator does not have a valid FoodSafe level 1 certificate, it expired. The owner must possess a valid certificate, or an equivalent certificate, so they can instruct staff on the correct and safe way to process food. This was mentioned in the last routine inspection report.
Corrective Action(s): Immediately obtain a valid FoodSafe Level 1 certificate, or equivalent certificate.

Routine inspection completed:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles and cloth buckets had [Cl2] of 200ppm.
- All foods stored in food grade container; covered; labelled; date coded; foods stored in groups with proteins below RTE foods; and food stored 6" off the floor on shelves or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- Exhaust canopy service and professional cleaning is due this month, as per service sticker. Ensure to contact the company to schedule the cleaning.

**A follow-up inspection will be done tomorrow (Mar. 9/23) to ensure the dishwasher has been fixed**
