Observation (CORRECTED DURING INSPECTION): Temperature of 3 buckets of gravy stored in walk in cooler were recorded at 9.7C, 10.4C and 11.0C. Staff stated that the gravy was prepared yesterday morning and cooled with ice wand before storing in cooler. Potentially hazardous food was above 4C for more than 2hours which could result in potential food contamination due to pathogen growth ad/or toxin production. 3 buckets were discarded at the time of inspection.
Corrective Action(s): - Please follow cooling curve when cooling hot potentially hazardous food: 60C to 20C within 2 hours and 20C to 4C within next 4 hous.
- Use shallow pans to expedite cooling

Observation (CORRECTED DURING INSPECTION): Raw sea food was stored above ready to eat food products on the shelving unit inside walk in cooler. Staff moved the container to the bottom shelf and away from ready to eat foods.
Corrective Action(s): To prevent the risk of cross contamination of ready to eat food with meat juices, please store raw meats on bottom shelves and ready to eat foods on top shelves.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Walk in freezer door has broken seal which may result in inadequate circulation of cold air inside the freezer. Ice build up was also observed along the door.
Corrective Action(s): Please service the door and ensure that it seals properly to maintain the required temperature.

Comments

Routine inspection conducted.

Findings:
- Temperature of all the coolers recorded at or below 4C
One of the prep cooler was turned off and not used for food storage.
- Freezers recorded at or below -18C
- Handwash station available and equipped with hot and cold running water, liquid soap and single use paper towels.
- 200ppm bleach sanitizer solution present in pails.
- Low temp mechanical dishwasher was in use at the time of inspection and 50ppm chlorine residual recorded.
- General sanitation of the facility was satisfactory.
- No signs of pest activity observed.
- Operator was not available on site during inspection but joined later. Operator has valid FOODSAFE Level 1 certificate.

Recommendations:
- Focus on safe food storage and cooling practices.
- Food used during preparation should not be left at room temperature for more than 2 hours. Bring small portions out that can be used within 2 hours.
