Observation: Required cleaning:
1. Commercial hood -removable panels - debris build up
2. Inside microwave and under microwave unit - heavy food debris accumulation
3. Pillar next to standing cooler - dried liquid dripping down pillar
4. Hard to reach areas around food prep areas - food debris accumulation
Corrective Action(s): Ensure all above areas are routinely cleaned to prevent build up.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1. Plastic wrap on metal bar above cooking line - collecting oil, unknown use
2. Single use disposable plastic bowl with sauces / meat balls/ other prepped food items stored in inserts in prep cooler. Operator is using bowls to make inserts more shallow and to allow smaller scoopers.
Corrective Action(s): Ensure all materials in kitchen are smooth, durable and easy to clean.
1. Single use plastic wrap should not be re-used multiple times or allowed to collect oil and grease. Discard all single use plastic wrap.
2. All PHFs stored in disposable bowls are creating an extra barrier between a cooler insert and the food. Discard the disposable bowls and place all food items directly in inserts to allow them to be kept cold. Get shallower inserts and or longer scoops so the handles do not sink into the food.

Observation: 1.Metal wire strainers (2) noted as damaged and have wire separating from main frame of strainer - this exposes the wires to possible breaking off.
2. 1 of 3 dry bulk food bin lids is cracked. Currently being used over bin with prepackaged dry food.
Corrective Action(s): Discard all damaged wire strainers and any other damaged equipment to prevent possible physical hazard and avoid equipment becoming more damaged.
1. Strainers discarded during inspection - operator talked to staff about risks.
2. Operator will look into a replacement lid.
