Observation: Kitchen staff do not appear to be utilizing a sanitizing chemical when manually washing kitchen utensils.

Corrective Action: Manual warewashing should include: washing with detergent and warm water, rinsing with warm water, and sanitizing and air drying. Staff were educated on the correct procedures and required concentration of bleach to use.

Observation: Overall sanitation requires improvement, specifically in the following areas:
- Overhead ceiling pipes/vents
- Underneath 3-compartment sink - debris on floor
- The sink next to 3 compartment sink
- Hard-to-reach areas like between coolers/freezers, underneath and behind cooking areas.

Comments

- Handsinks supplied with hot and cold running water, soap, and paper towels
- No signs of pests observed at time of inspection
- All coolers temps at 4C or less, with thermometer inside
- Freezer temperature was satisfactory
- Hot holding was at 60C or above
- Bleach sanitizing spray bottle was available; concentration was 200ppm.
