- sanitizer measured 200ppm chlorine
- dishwasher reached 71C at the final rinse cycle
- proper cooling observed - rice was being cooled in shallow pans
- dipper well running

- no obvious signs of pests; pest control is handled by professional pest control through Avalon Dairy Farm next door
