Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Wiping cloths are not bing properly stored.
Correction: - Use 200ppm Quats solution and make as per manufacturer's instructions
- Change sanitizing solutions in sinks and buckets every couple of hours
- Change sanitizing solutions in bottles daily
- Use test strips to measure the concentration of sanitizer.
Comments

Reinspection based on previous inspection reports.
- Temperature Control: Monitoring required.
- Manual Dishwashing: (4 Step method) Ensure all food contact surfaces are being washed and disinfected after use. All implements are to be stored in a sanitary manner, in order to prevent post contamination.
- Wiping cloth storage improved. Cloths used on food contact surfaces are to be stored in a sanitizer at all times. Cloths are to be kept completely submerged. (ie: 200 ppm quats) Limit the number of cloths being used.
- Food Storage: Recommend continuing efforts to keep all items stored on upper shelves. Stock rotation and monitoring discussed.
- Sanitation: Great improvement. Cleaning schedules are to be established and followed. (ie: daily/weekly/monthly)
- Pest Control: An ongoing pest control program is required to be followed within this establishment. A certified pest control company is currently providing services.
- Garbage/Recycling and Compost Storage: All items are to be stored in covered, rodent proof bins. Surrounding area is to be kept clean. All food debris is to be cleaned up daily.

Deli:
- FoodSafe trained staff are required to be on site.
- A Generic FoodSafety Plan/Sanitation Plan is posted for review.
