Observation: Mouse droppings found in back storage area, mop room and bar area.
Corrective Action(s): Mouse droppings appear to be old as there is no rodent activity anywhere else in the premise. Clean up the droppings and sanitize the affected areas. Ensure to have your licensed pest control company place rodent traps in the areas where droppings were found to monitor for rodent activity.

Observation: Grease accumulation found on the underside of the wall shelf next to the stove.
Corrective Action(s): Clean up the grease accumulation as this may attract pests. The kitchen shall be cleaned thoroughly on a regular basis to prevent accumulation of grease and filth.

Comments

General observations:
Coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Food storage practices were satisfactory.
Discussed with operator about organizing the freezer space to ensure the freezer door always closes properly.
General sanitation was satisfactory, except as otherwise noted above.
Hand sinks stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
Low temperature dishwasher had a chlorine sanitizer concentration of at least 50ppm. Operator is equipped with chlorine test strips.
Discussed with operator to regularly monitor the sanitizer concentration. When changing bottles of sanitizer, ensure air bubbles in the sanitizer line are purged to allow for adequate sanitizing of utensils.
Bleach sanitizer (spray bottle): 200ppm chlorine.
Chemicals are stored in a safe manner.

Notes: Premise now opens from 6pm onwards into the evening.
