Observation (CORRECTED DURING INSPECTION): Plastic cover inside of the ice machine requires better cleaning.
Corrective Action(s): Ensure to have the machine emptied out first and cleaned/sanitized as discussed at this time. Scrub the area.

Observation: Few uncovered foods being stacked on top of another in the walk-in cooler. Raw meat placed beside cooked food.
Corrective Action(s): Ensure to have all raw meat/seafood placed below and away from ready to eat (i.e. cooked food, fresh vegetables) foods at all times. Ensure all foods are properly covered with food grade materials. Do not stack food on top of another without providing barriers in between.

Observation: The following areas require cleaning:
- Floors underneath dry storage bins
- Floors underneath stove/cooking equipment
- Floors underneath prep sinks
Corrective Action(s): Ensure to have the above mentioned hard to reach areas on a more regular basis.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezer below required temperature of -18'C.
-Temperature monitoring system in place. Records kept up to date. Good!
-General food storage practice satisfactory, except mentioned above.
-High temperature dishwasher achieved 73.1'C at the plate level after final rinse.
-Low temperature glasswasher achieved minimum level of chlorine (50ppm) at final rinse.
-200ppm chlorine solution available in spray bottles.
-Traps in place. No evidence of pest activity observed.
-Fish tanks washed/sanitized every week.
-Ice machine scoop stored in proper manner.

NOTE: Ventilation canopy hood overdue for professional cleaning. Already scheduled. OK.
NOTE: Proper thawing method being followed at this time. Good.
NOTE: Various food items (i.e. raw meat, cut vegetables) left on counter for prep at this time. Ensure all area handled and either cooked or put back in cooler/freezer within the next 30 minutes.

General maintenance and sanitation of the facility satisfactory, other than mentioned above.
