Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher measured 0 ppm chlorine. Container of chlorine pellets was a little less than half full. Operator filled up the container of pellets afterwards. Subsequent testing of the dishwasher resulted in 50 ppm chlorine. Operator states the dishwasher was tested earlier using chlorine test strips and was working properly. An alarm is supposed to sound and dishwasher is locked from use when the sanitizer level is too low.
Corrective Action(s): Ensure the chlorine pellet container is filled up at all times. Continue to monitor dishwasher sanitizer concentration on a regular basis to ensure it is working properly.

Corrective Action(s): Discard all ice inside the ice machine. Clean and sanitize the interior of the ice machine to remove mould.

- Temperature monitoring system is in place
- Low temperature dishwasher is available. 50 ppm chlorine sanitizer detected after correction.
- 200 ppm Quat sanitizer available from the dispenser at the three compartment sink
- 100 ppm chlorine sanitizer available in buckets with wiping cloths
- Ice machine scoop is stored in sanitary manner
- No signs of pests observed during inspection. Ecolab provides monthly pest control services. Reports available for review.
