- Premises had just open for operation and staff were still cleaning/tidying up from the night before. No patrons or food preparation taking place at time of inspection.
- All hand was stations had soap, paper towel, hot and cold running water. See violation code 401 re: accessibility/obstruction
- All coolers 4C or less (ie. under counter, prep coolers x2, downstairs unit, bar units...etc)
- Freezers -18C or less
- Premises does not do any hot holding. All foods are made per order.
- Menu is limited to sandwiches/paninis, drinks, chicken strips, chicken wings, yam fries, and baked goods/desserts obtained from approved sources.
- No evidence of unapproved menu items being sold at time of inspection.
- Quat sanitizer at source and in spray bottle 200ppm. Operator said staff use paper towel to wipe. **Ensure reusable cloths are stored in sanitizer solution to prevent bacterial growth if used. Also ensure the bar area has sanitizer solution.**
- General sanitation satisfactory in upstairs area. No obvious signs of pest activity noted at time of inspection. See violation code 305 re: boxes
- Ice machine across espresso machine appeared clean. No scoop available for the ice machine. Ice well at bar was empty. Ensure scoop for ice is always stored in a separate container outside of the ice. **Do not store the scoop inside the ice or on the counters**
- High temperature dishwasher achieved 77.8C |
