401 - Adequate handwashing stations not available for employees [s. 21(4)] Observation (CORRECTED DURING INSPECTION): Noted both hand sinks in the food preparation area were obstructed. One had a cutting board over it and the other had a box in it. The wall mounted soap dispenser in the hookah preparation room had fallen down the wall where it was obstructed by the table beside it. The hand sink in the bar area had two mixing spoons in it. Corrective Action(s): Do not obstruct hand wash stations or any of their equipment (ie. soap dispenser and paper towel dispenser). Ensure hand wash stations and their equipment are fully accessible at all times. Violation Score: 5

209 - Food not protected from contamination [s. 12(a)] Observation: Noted drip tray pan installed slight over the ice well at the bar. Corrective Action(s): Move drip tray pan over so it is not above the ice well. Also install a splash guard between the drip tray and the ice machine. Violation Score: 3 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)] Observation: Large pile of boxes were stored in the downstairs area. Corrective Action(s): Remove boxes from premises. Violation Score: 3 311 - Premises not maintained as per approved plans [s. 6(1)(b)] Observation: Noted glass washer installed at the bar area and a bellini machine on the floor at the bar area. Also noted ice machine installed in the food preparation area. Operator said that permits have been obtained for the ice machine, the bellini machine is not in use and the glass washer is not hooked up. Corrective Action(s): Operator to send permit for ice machine installation to the undersigned. The bellini machine and glass washer are to be removed from the premises. A follow up inspection will be conducted to verify this. Updated floor plans and food safety and sanitation plans are to be submitted for approval before making any changes to the premises. - Premises had just open for operation and staff were still cleaning/tidying up from the night before. No patrons or food preparation taking place at time of inspection. - All hand was stations had soap, paper towel, hot and cold running water. See violation code 401 re: accessibility/obstruction - All coolers 4C or less (ie. under counter, prep coolers x2, downstairs unit, bar units...etc) - Freezers -18C or less - Premises does not do any hot holding. All foods are made per order. - Menu is limited to sandwiches/paninis, drinks, chicken strips, chicken wings, yam fries, and baked goods/desserts obtained from approved sources. - No evidence of unapproved menu items being sold at time of inspection. - Quat sanitizer at source and in spray bottle 200ppm. Operator said staff use paper towel to wipe. **Ensure reusable cloths are stored in sanitizer solution to prevent bacterial growth if used. Also ensure the bar area has sanitizer solution.** - General sanitation satisfactory in upstairs area. No obvious signs of pest activity noted at time of inspection. See violation code 305 re: boxes - Ice machine across espresso machine appeared clean. No scoop available for the ice machine. Ice well at bar was empty. Ensure scoop for ice is always stored in a separate container outside of the ice. **Do not store the scoop inside the ice or on the counters** - High temperature dishwasher achieved 77.8C
