Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: - Mildew-like and mold-like substance observed on interior surfaces of ice machine.
Correction: - Empty ice machine and thoroughly clean all surfaces. Remove mildew-like and mold-like substance from interior surfaces of ice machine.
- SANITIZE all interior surfaces of ice machine. Use 100-200 chlorine bleach solution to sanitize.
(100-200 ppm chlorine bleach sanitizing solution = 1 tsp chlorine bleach + 1 L water).
- Allow interior of unit to AIR DRY before refilling with ice.

- Liquid hand soap in a dispenser, papertowels, hot and cold water available at handsink.
- Interior of ice machine has been cleaned and sanitized.
- Manual warewashing and sanitizing procedures reviewed with employee on shift.
- 100-200 ppm chlorine bleach solution available for sanitizing food contact surfaces.

**CORRECTION ORDER issued on 14-April-2023 (Inspection Report DNGG-CR7NEQ) still valid and outstanding. Operator advised that a new dishwasher has been purchased and is scheduled to be installed on 02-May-2023. Ensure that unit is NSF Certified for commercial use. Dishwasher must operate per unit's data plate. Follow-up inspection to be conducted to verify that outstanding violation is corrected.**
