Observation: Pizza prep cooler measured 8C in under compartment, and 9-10C in inserts.
Correction: Adjust or repair cooler as necessary to maintain all food and compartments at 4C or colder. Re-install metal lids on prep cooler - you can have these open while you are making pizzas, but they must be closed during non peak times.

Observation: Only one plug is available for the triple sink
Correction: you must have the ability to properly wash, rinse, and sanitize dishes. If you don't have 3 plugs, you cannot be washing, rinsing and sanitizing properly. Please obtain one plug for each sink. 3 compartment sink washing sign will be provided at follow up inspection.
Comments

Cooler is measuring less than 4C today. Lids have been re-installed on pizza prep table and interior of pizza cooler has been cleaned and organized.
Dishwashing sink is properly equipped with plugs for 3 compartment washing, rinsing, and sanitizing.
