Observation (CORRECTED DURING INSPECTION): 1.Wiping cloths are dry and notably soiled.
2. Sanitizer unlabelled spray bottle noted 200 ppm chlorine and sanitizer bucket noted 100 ppm chlorine with wiping cloths. Operators exchange wiping cloths daily.
Corrective Action(s): Ensure all sanitizer is maintained between 100-200ppm chlorine in labelled container. Wiping cloths must be stored in sanitizer solution when not in use. Do not store wiping cloths on the counter.

Observation (CORRECTED DURING INSPECTION): 1.Rice scooper stored in room temp water
2. Ice scooper stored in ice in unit.
Corrective Action(s): Ensure all scoopers are store in sanitary condition.
1. Rice scooper if stored in water must be have water changed every 4 hours. Discussed ice bath practice.
2. Ice scooper must be stored outside of ice machine. Scooper relocated outside unit on sanitary plate above unit during inspection.

Observation: 1.Cardboard used as splash guard for wall.
2.Newspaper used to line shelves around heating elements for splatter and on shelves around dishware
Corrective Action(s): Ensure all materials in the kitchen are smooth, durable, easy to clean and non-absorbing. Cardboard and newspaper do no meet the standards. Remove and replace with suitable material.
