Observation (CORRECTED DURING INSPECTION): Greater than 200 ppm chlorine sanitizer was measured in the spray bottle as the chlorine test strips were bleaching out.
Corrective Action(s): Ensure 100 ppm chlorine sanitizer is setup in the spray bottle -i.e. use 1/2 teaspoon unscented bleach per L of water. Staff member setup up 100 ppm chlorine sanitizer upon verbal direction by the district E.H.O. of Fraser Health.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: A garbage bag of empty pop cans, a pile of flattened cardboard, and multiple empty glass bottles were observed stored near the upright freezer.
Corrective Action(s): Remove the accumulating cardboard, pop cans, and empty bottles from the food premises within the next three business days. Ensure a regular waste control program is implemented to prevent conditions that may lead to breeding and/or harbourage of pests.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Only staff member present onsite with the Operator being away was not certified in a FOODSAFE/equivalent course. Operator was expected to return from the bank by 5 PM.
Corrective Action(s): Ensure that at least one staff member onsite has FOODSAFE/equivalent course training at all times in the absence of the Operator. This is a regulatory requirement under the Food Premises Regulation; Failure to comply in the future will result in enforcement action (Issuance of VIOLATION TICKETS and/or CORRECTIVE ORDERS).

Handsink in the kitchen and both handsinks in the customer washrooms were adequately supplied with hot and cold running water, liquid soap, and paper towels.
Upright freezer and freezer component of domestic cooler were at or below -18 degrees C.
Display cooler was at 2.7 degrees C (4 degrees C or less).
Prep. cooler was at 2.3 degrees C (4 degrees C or less).
Domestic cooler was at 1.9 degrees C (4 degrees C or less).
Refrigeration units were equipped with thermometers.
A probe thermometer was available.
Dishwasher final rinse temperature was 72.3 degrees C (71 degrees C or hotter at the plate).
No signs of recent pest activity were observed at the time of inspection.
Food storage areas were clean.
Note: Minor cleaning is needed below the 2-compartment sink to remove the debris.

A follow up inspection will be conducted by next week. Ensure the extra bottles, pop cans, and cardboard boxes are removed and that a person with FOODSAFE training is available onsite at all times for the operation of the food service establishment to avoid any enforcement action.

Note: A FOODSAFE course schedule taught by Fraser Health was provided to the staff member.
