Hand wash station supplied with liquid soap and paper towel in dispensers.
Staff have clean uniforms and aprons.

Deli side:
Coolers <4C.
Freezers <-18C.
Walk in cooler <4C.
Walk in cooler is made of wood with wood shelving. These are not easy to clean.
Wood is in fair condition and not stained. Monitor and clean as best as you can. Ideally, move to plastic or metal surfaces that can be more easily cleaned and sanitized.
All items are covered and wrapped and protected from contamination.
Be sure to clean Deli slicer every 2-4 hrs.
Keep sanitizer near deli slicer to use when necessary.
Herbs are from garden - washed/rinsed before use.

Meat Processing/Cutting side:
Meat is not processed in refrigerated environment so be sure to clean meat cutter and tables every 2-4hrs with soap and water and then bleach sanitizer.
Bleach sanitizer available.
Operator says cleaning and sanitizing is completed between species. Great.

Beef hung have stamps (Maple Hill). Rails allow cuts to be hung off the floor. No meats are directly touching floor. Great.
Meat is aged on site after purchase as sides.
Casings: Collagen or pork intestine.
Sausages made and hung on site in coolers.

Reviewed receipts for pork, chicken and beef.
Operator maintains all receipts and keeps for 7 years for tax purposes. Thank you.
Operator does not do custom cuts for individual walk ins. No cuts for game meat and walk ins.
