Observation (CORRECTED DURING INSPECTION): Gravy in the hot holding unit noted at 57 deg. C internally. The hot holding unit was off at the time of inspection. The gravy was cooked 30 minutes prior to inspection.
Corrective Action(s): Reheat the gravy to 74 deg. C for 15 seconds. Ensure all foods in the hot holding unit is kept at 60 deg. C or higher.

Corrective Action(s): Store in-use wiping cloths in the sanitizer solution to prevent bacterial growth on the wiping cloths.
