New shelving provided for walk-in cooler. Sanitizer buckets ~ 200 ppm, wiping rags were being rinsed out at time - okay. Smaller volumes of produce out, but remember these should be either prepared right away or returned to fridge. Small volumes out during peak periods okay as long as adequate turnover e.g. 30 minutes. Knives in sanitary condition, stored in clean container. Pallet discarded.
