Observation: Line prep cooler not properly cold holding perishables at 8c. The perishables were recently loaded into the cooler and were relocated to the walk in cooler at time of inspection.
Deep fryer batter observed being stored at room temperature.
Corrective Action(s): Either store batter in a ice water bath slurry or keep inside a cooler when not in use.

Observation: Meat slicer observed not properly cleaned after use
2 knives observed on the clean magnetic holder with food debris affixed. These were removed to be cleaned
Corrective Action(s): Ensure staff have been trained on how to properly clean and sanitizue the slicer after use.
Ensure staff are aware soiled knives are to be warewashed afer use

Observation: Hole observed in screen door.
Corrective Action(s): Repair damage in the screen to prevent fly entry into the kitchen.

Observation: One line prep cooler observed not properly cold holding at 8c
Final rinse pressure gauge on dishwasher only displying approx. 5psi on final rinse. Temperature differential measured inside dishwasher when final rinse is activated. 70c detected in one corner and 73c detected in the opposite corner. Final rinse water may not be spraying uniformly at the designed pressure for this dishwasher.
Meat slicer observed stored at floor level on a tray
Caulking at wall surface adjacent to dishwasher observed with mould
Corrective Action(s): Contact technician for both the dishwasher and the line prep cooler. Do not use to store perishables inside the line prep cooler until it has been repaired and capable of cold holding at <4c
Store meat on a shelf as in its current located the slicer may be splashed with mop water when cleaning the floor.
Recaulk wall surface.
