Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer not available at correct concentration. Operator unable to prepare sanitizer at correct concentration for safe and effective sanitizing of food contact surfaces.
Corrective Action(s): Sanitizer was prepared at 100 to 200 ppm chlorine bleach during the inspection. Wiping cloth stored in sanitizer. Ensure sanitizer is always available during operations at the correct concentration for sanitizing food contact surfaces. Manual warewashing poster with sanitizer preparation instructions is posted.

Observation (CORRECTED DURING INSPECTION): 1. A sport ice pack with gel beads observed in one chest freezer. Beads leaking/spilling from gel pack. Note: No food observed to be contaminated (food covered in this area).
2. Several food items observed to be uncovered in coolers and freezers.
3. Bleach water sanitizer measured well in excess of 200 ppm chlorine bleach.
4. A food grade bag used for covering food was observed with spots of mould inside bag.
5. Food observed to be stored in open tin cans in coolers.
Corrective Action(s): Sport ice pack removed.
Ensure all food is properly covered to protect from potential contamination.
For canned food, ensure food is transferred to a suitable, covered food grade container immediately after opening if food is being stored. Cans may potentially oxidize/rust over time once opened, potentially contaminating food.
Ensure sanitizer is available at safe and effective concentrations for sanitizing of food contact surfaces without a rinse step (e.g. 100 to 200 ppm chlorine bleach).
Bag discarded. Note: It was stated that bags are not being reused/washed.

Routine health inspection.
Walk in cooler at 4 degrees C.
Upright cooler at 2 degrees C.
Freezers at -18 degrees C or less.
Hot holding rice at 60 degrees C or more.
Thermometers in place for coolers.
Reviewed cooling and reheating procedures.
Hand washing stations are supplied with hot and cold running water, liquid soap, and paper towels (kitchen, washroom).
Three compartment sink supplied with hot and cold running water. Sink plugs, detergent, and bleach available. A 100 ppm chlorine bleach sanitizer was prepared in the third sink compartment during the inspection.
Ventilation canopy in clean condition.
No signs of pest activity observed at time of inspection.
