Hot holding for gravy and rice maintained above 60 degrees Celsius.
- Food items covered and protected from contamination.
- Food items stored at least 6 inches off the floor.
- 3-compartment sink set up for manual dishwashing.
- QUAT sanitizer for manual dishwashing and food contact surfaces = 200 ppm.
