Observation (CORRECTED DURING INSPECTION): 1) Meat debris build up observed on meat slicer (not in active use)
2) Ice machine had biofilm/mold growth in the interior
Adequate wash/sanitize required of critical food contact surfaces.
Corrective Action(s): 1) DIsassemble meat slicer. Use detergent to clean off food residue in place. Use 100 ppm chlorine solution to sanitize and let air dry. 2) Discard all ice. Follow the wash rinse sanitize steps of interior compartment (not just ice basin)

Observation (CORRECTED DURING INSPECTION): Hand wash sink in kitchen/fod prep area was missing the hot water knob. Access to hot water was from the bottom of the sink (Hard to reach). The use of cold water alone is not sufficient in ensuring good hand hygiene of food handlers
Corrective Action(s): Repair handwash sink and ensure staff have easy access to hot/cold running water, soap, and paper towels. Sink cannot be used for other purposes

Observation (CORRECTED DURING INSPECTION): 1) Raw chicken observed being washed in a basket in the 2 compartment sink. Chicken was fully exposed and water droplets were contaminating surfaces.
