Comments

- All hand sinks were supplied with hot and cold running water, liquid soap, and paper towels
- Quats sanitizer available at 200 ppm
- High-temperature dishwasher reached 77C at plate surface level during rinse cycle - good. *Note: Slight amount of soapy residue remaining on dish surface after rinse cycle. Monitor and service dishwasher if necessary.
- Walk-in cooler and prep coolers were measured to be below 4C
- Freezer temperature satisfactory
- All refrigeration units equipped with accurate thermometers
- Hot holding units were maintaining temperatures at above 60C - good
- Food storage practices good - all food stored off the floor and covered
- Temperature records well maintained and up to date
- General sanitation excellent
- No signs of pest activity

Note: Operator received operating permit in mail yesterday. Ensure to post permit in a conspicuous location.
