Observation (CORRECTED DURING INSPECTION): Cooked rice stored in the warmer recorded at an internal temperature of 33C. Staff confirmed that rice was made in the morning (>2 hours at room temperature). Operator discarded the half filled container of cooked rice at the time of inspection.
Corrective Action(s): Please ensure that all hot potentially hazardous food are stored at or above 60C.

Comments

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Temperature of prep cooler recorded at 4C
- Undercounter coolers (x2) below 4C
- Ice cream freezer at -5C
- Pop cooler at 3C
- Walk in cooler at 4C
- Stand up freezer at -16C

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash stations were adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and the concentration of bleach noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.
- Utensils and tongs were found in sanitary condition.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.

NOTE - Operator has installed 2 ceiling tiles (4'x8') right above the prep cooler area. Both tiles are made of smooth, easy to clean and non-absorbent material.

Please monitor the internal temperature of rice inside the warmer every hour and if the warmer is unable to maintain a temperature of 60C or above, consider servicing or replacing the rice cooker with new one. Notify your district EHO if a new equipment is added to the facility operation.
