Observation (CORRECTED DURING INSPECTION): - Container of bleach used for sanitizing dishes was empty
- No plugs present to fill sink for dishes to be properly submerged.
Corrective Action(s): - Operator obtained/purchased bleach at the time of the inspection.
- Obtain plugs for the warewashing sink. Alternate means to plug the sink to be used in the interim. [Correction date: 1 week]

Corrective Action(s): - Operator supplied roll of paper towel to washroom at time of inspection. Load appropriate paper towel into dispenser.

Corrective Action(s): - Remove droppings and disinfect the area with a bleach solution. Monitor area for any additional rodent activity.

Observation: - Garbage bag noted covering food in walk-in cooler
- Pizza sauce stored in large tote bin. Tote bin is not food grade and cannot be fully submerged in the warewashing sink to be washed and sanitized.
Corrective Action(s): - Use food grade wrap or bags to cover food. Do not use garbage bags as they are not intended for use with food. Garbage bags may contain chemicals which can transfer to food.
- Use food grade containers to store food. Transfer sauce to food grade container. Ensure containers used can fit into the warewashing sink to be washed and sanitized. [Correction date: today]

- Coolers were operating at acceptable temperatures (4C or colder):
- Walk-in cooler 3C
- Beverage cooler 4C
- Single door undercounter cooler 3C
- Prep cooler with drawers 3C
- Prep cooler (left) 4C *Cooler was initially 8C. Operator determined that it was unplugged and indicated he had been defrosting it. Once the cooler was plugged in again the temperature decreased to 4C. Do not defrost cooler while potentially hazardous food is present within it. Potentially hazardous food must always be maintained at 4C or colder.
- Chest freezer -14C
- Small single door freezer -16C
- Operator has completed Foodsafe level 1. Certificate valid until Jan 2024
- Hot holding unit for pizza slices has been added. Unit was not in use at time of the inspection. Ensure pizza is maintained at 60C or higher.
- Pest control contract in place with monthly service. Service reports were provided by Operator at time of the inspection.
- Diluted bleach sanitizer solution present in spray bottle for sanitizing food contact surfaces. Concentration measured 200ppm chlorine.
