Inspection conducted to follow up on outstanding violations from the previous routine inspection (ABAI-BFAR46):
- Hot holding of hollandaise sauce set at 66.9C in sous vide bath (note the hollandaise sauce is cooked to above 74C on the stove and only hot held in the sous vide bath)
- Required cleaning has been completed
- Updated floor plans have been submitted
- Paper towel available in tray at the front hand sink
- Manager has discussed proper hand drying with staff and reusable cloth towels are not to be used for this purpose
