Routine inspection of the Farm kitchen, market and bakery areas.

Walk-in cooler below 4 degrees C
Walk-in freezer at -20 degrees C.
Blast freezer at -30 degrees C.
Two door cooler at 1 degree C.
Dishwasher reached 71.5 degrees C at the plate surface during final rinse.
Bleach sanitizer in spray bottles tested 200 ppm.
Batch records are maintained for all preserved foods and baked goods produced onsite.
pH results reviewed for corn salsa, asparagus, beans and raspberry vinegarette and found to be satisfactory.
Liquid soap and paper towels available at all hand sinks and sinks.

Following items require your attention:

1. Do not use any push pins and/or thumb tacks on bulletin boards located in food production and storage areas.
2. Install weather stripping along side and at the bottom of one of the garage doors in the dry storage room to exclude pests. (By June 8, 2018)
3. Ensure to clean the floor thoroughly underneath all shelves especially across from the walk-in freezer.
4. Clean floors thoroughly in the staff washroom and chemical storage area
4. Place accurate thermometers inside all coolers and monitor/record temps daily.
5.Ensure all spray bottles and buckets etc used for cleaners/sanitizers are properly labelled.
6. Suggested water activity and pH testing from an accredited lab for all no-sugar jams and spreads. ( By June 15, 2018)
7. Clean the fan unit and ceiling in the walk-in cooler used for storing berries
8. Clean fan covers for produce cooler located in the market area (By June 6, 2018).
9. Recommended placing rodent control devices (tin cans or mechanical traps) in the dry storage room.
10. Ensure that staff that have their FOODSAFE certification expiring in July, 2018 renew their certification or take the online refresher course.
11. Ensure to obtain chlorine test papers for testing sanitizer in spray bottles. Must be replaced twice a week.
