Observation:
Ventilation canopy is full of grease. Cleaning was to be done in September 2019 according to the label.
Corrective Action(s):
Service and clean ventilation canopy. This is also to prevent a fire hazard. To be corrected by October 18, 2019.

Observation:
1. Caulking at 2-compartment prep sink is deteriorating and filthy.
2. Tank lid for employee washroom toilet is missing.
3. Wood piece holding utensils on wall (adjacent to 2-compartment prep sink) is not sealed.
Corrective Action(s):
1. Remove old caulking and replace with new layer. To be corrected by October 25, 2019.
2. Replace tank lid for employee washroom toilet. To be corrected by October 25, 2019.

Operator's FOODSAFE Level 1 certificate has expired since January 11, 2019. Operator was unaware that his certificate had expired.

- Email health inspector registration information.

Routine Inspection:
Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- Coolers maintained at or below 4 degrees Celsius (40 degrees Fahrenheit).
- Freezers maintained below -18 degrees Celsius (0 degrees Fahrenheit).
- Hot holding maintained above 60 degrees Celsius (140 degrees Fahrenheit).
Bleach sanitizer in spray bottles = 200 ppm.
High temperature dishwasher sanitizing with 72.5 degrees Celsius at dish level after final rinse cycle.
Ice machine clean.
General cleanliness and organization satisfactory.
No signs of pest activity at the time of inspection.
Both back doors have tight-fitted screens to prevent pest entry.
