Observation (CORRECTED DURING INSPECTION):
Uncooked rice observed to be soaking in water (in the rice cooker) at room temperature. THIS IS A REPEATED VIOLATION. Person in charge informed that this is done daily. The uncooked rice for today was being soaked for less than 2 hours.
Corrective Action(s):
- Move soaked rice into the cooler immediately.
- Uncooked rice soaked in water is exposed to moisture and is considered a potentially hazardous food. Discontinue practice to soak rice at room temperature.
- Ensure rice exposed to any moisture content is stored at or below 4 degrees Celsius, or cooked and hot held at or above 60 degrees Celsius.
- Progressive enforcement, including an Order or Violation Ticket, will take place upon any repeated violations in the future.

Permit to Operate from the Fraser Health Authority not posted. Decal for annual permit fee present onsite, however the actual permit was not posted or available.
Corrective Action(s):
Post Permit to Operate where it is clearly visible to the public. If the permit cannot be found, then fill out a permit replacement form and submit to Fraser Health.

Routine Inspection:
- Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
- Under counter coolers maintained below 4 degrees Celsius.
- Thermometers available in coolers.
- 3-compartment sink set up properly for manual warewashing. Sink plugs in use.
- Concentration of QUAT sanitizer at dispenser and for manual warewashing = 200 ppm.
- Bulk rice stored in pest proof container.
- Acidified sushi rice measured at pH level of 4.0.
- All food items covered in coolers.
- Overall cleanliness and maintenance satisfactory.
- No signs of pest activity at the time of inspection.
