Follow up inspection

All outstanding issues have been corrected:
-100 ppm chlorine sanitizer was set up again in buckets with wiping cloths near food preparation areas in the kitchen and sushi bar.
-100 ppm chlorine sanitizer in a spray bottle was available for sanitizing tables in the dining area.
-The small white cooler was at 1.9 degrees C (4 degrees C or less) and it was equipped with a thermometer. The operator had defrosted the ice buildup inside the cooler. Continue monitoring the cooler temperature throughout the day and defrost the ice as you see it accumulate over time.
-A probe thermometer was available on-site. The food safety plan mentioned cooking (>74 degrees C) and hot-holding temperatures (>60 degrees C) of food.
-Temperature records were being maintained.
