-Follow-up inspection to confirm dishwasher operation:
-Key Food Service technicians on-site at time of inspection completing repairs to the dishwashing machine
-Confirmed rinse temperature is now reaching/exceeding 71 degrees Celsius at the plate level (72.9C)
-Please ensure to perform daily checks on the the dishwashing machine to confirm the following:
a) Red indicator light on the booster heater is turning on
b) Both temperature gauges on the dishwasher (wash temp & rinse temp) are working
c) Rinse temperature gauge is consistently reaching/exceeding 82C/180F temperature
*Contact a repair technician ASAP if dishwasher is not operating as expected and utilize supplemental sanitizing measures on a temporary/emergency basis until dishwasher assesment is completed*

Temporary/emergency measures:
1) Switch to using single-service dishware, utensils, cups, etc for food-service to patrons, and/or:
2) Manually-sanitize each load of disware/utensils using a food-grade sanitizer solution (submerge entire load in the solution, then allow to air-dry).
