302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): Quats sanitizer pails were between 50ppm and 100ppm. Quats sanitizer dispenser was at 200ppm. Corrective Action(s): Ensure Quats sanitizer is maintained at 200ppm for proper sanitizing of food contact surfaces. Run the Quats sanitizer dispenser for about 5 to 10 seconds prior to filling sanitizer pails. Sanitizer pails were emptied and filled with 200ppm Quats sanitizer. Violation Score: 5

Comments

-Follow-up inspection to February 16, 2018. -Hot holding cabinet and line unit were greater than 60C. -Meat slicer was being cleaned and sanitized at the time of inspection. -Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. -General cleaning has been carried out in the facility (additional attention required on the nozzles of the fountain drink dispensers). Ensure facility is maintained in a clean and sanitary condition at all times. *A severely dented can was found in the dry storage area. Item was removed to be returned to the supplier. Ensure canned items are checked for damages before being placed on the dry storage shelving. The safety of severely dented cans cannot be guaranteed. -Please contact the inspector if you have any questions or concerns.
