Observation (CORRECTED DURING INSPECTION): Hand washing station by the cooking line was used to store a measuring cup and wiping cloths.

Observation (CORRECTED DURING INSPECTION): Scoop was stored inside the bulk flour bin with the handle in direct contact with the flour.
Corrective Action(s): Remove the scoop from inside the bin and store it outside to avoid contamination from the handles to the flour. Date to be corrected by: Immediately

Observation: Accumulation of debris observed underneath and around the floors at the large sliding double door cooler.
Corrective Action(s): Clean up this area. Perform regular cleaning, especially in hard to reach areas, to avoid accumulation of debris. Date to be corrected by: September 5, 2018

- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (double door, single door, prep) at < or = 4C
- Freezers (double door, single door) at < or = -18C
- Hot holding units were not in use during inspection. Ensure they are capable of maintaining 60C and above.
- Low temperature dishwasher in use. Chlorine sanitizer dispensed at 50 ppm at the plate level during the final rinse.
- 200 ppm Quat sanitizer is available
- Meat slicer is well-maintained
- No signs of pests observed during inspection
- Permit is posted in a visible location
